If you’ve never used an immersion blender before, prepare to be amazed. Sink it into a soup pot or even your morning latte, and hit that button. After a couple of minutes, you’ll have something silky smooth and scrumptious. Of course, it won’t work too well on big chunks of ice – so you’ll still need a blender for those frozen cocktails. But for soups, smoothies, and salad dressings, these immersion blender recipes are ideal.
1. Immersion Blender Hollandaise Sauce
You know that luxurious, buttery sauce that comes with eggs benedict? Well, this is that sauce. The trick is to emulsify (mix) the ingredients well, which is often done in a blender. But using an immersion blender results in an even more decadent and creamy finish. You only need five ingredients (plus water), and it’s ready in five minutes. This is the perfect recipe for showing off your skills in the kitchen the next time you cook Sunday brunch.
2. Guacamole
If you like super creamy guacamole, you have to try making it using an immersion blender. This method creates a well-blended and flavorful guacamole that doubles as a spread. Just blend avocados with cilantro, tomatoes, lime juice, salt, and pepper in a bowl until smooth. Of course, guacamole is traditionally served with crispy tortilla chips, but you can also try it with veggie sticks, on top of chicken or on toasted bread.

This is so good, I bet even the kids will ask for seconds.

Pico de Gallo is a fresh salsa made with chopped veggies, lime juice, and salt. It’s delicious with chips or as a topping to almost anything! Use an immersion blender to speed up the process, and you’ll have a yummy Pico de Gallo in minutes!

This cauliflower cream sauce is pure magic. Not only is it vegan-friendly, but it only calls for three ingredients! It’s important to note that this is meant to be used as a base for thickening other sauces and creams. On its own, it doesn’t have much flavor. But when you add garlic, onion, spices, or acid, it can transform into a tasty “cream.” Add it to dairy-free mac and cheese or alfredo sauce, and you’re good to go.

Cilantro and lime are so tasty together, and this dressing is so versatile. Plus, it’s ready in just five minutes. 12. Chimichurri Sauce
Chimichurri is an herbaceous oil and vinegar blend traditionally used on steak. The herbs and dry ingredients are pulsed together with an immersion blender or food processor before adding the oil and vinegar. It’s tangy and slightly acidic, which pairs well with the richness of the meat. This is a vegan sauce, so you don’t have to serve it with steak. Instead, try using it as a marine for tofu.

Pesto is another really adaptable sauce. Unfortunately, it’s also pretty expensive due to the pine nuts in the mix. So, if you’re on the hunt for a more budget-friendly version, this basil and walnut recipe is for you. It has a similar taste and texture and is just as delicious. Usually, pesto is made with a mortar and pestle, but this is an immersion blender list, right? And you won’t believe how fast this recipe comes together.
14. Raspberry Vinaigrette (Raspberry Salad Dressing)
Raspberry vinaigrette is a sweet and savory way to flavor your favorite salads or protein. Use fresh or frozen berries and use an immersion blender to blend them until they’re as smooth as possible. I like to strain this to get rid of any seeds, but that’s optional. The bright sweetness of the raspberries, with the tangy vinegar and mustard, is a match made in salad heaven. 15. 3 Minute Lemon Dijon Vinaigrette
There are a lot of salad dressings on this list because the immersion blender is so good at emulsifying ingredients. In case you don’t know, an emulsification is a mixture of two ingredients that normally don’t mix. For example, oil and water won’t combine if you just stir them. Instead, they need to be mixed/blended at high speed. In many cases, salad dressings are emulsified because they use oil as their base, along with other liquids. And this one might be my favorite dressing recipe ever. It’s lemony, mustardy, thick, and creamy. Plus, it can also be used as a marinade for totally scrumptious fish or chicken dinner. The bonus is that it only takes three minutes or less!

This sweet potato soup is another comforting bowl of delicious veggies. And while it doesn’t call for cream, it’s still rich and delicious. The immersion blender makes this roasted sweet potato soup silky smooth. All of the veggies create a wonderfully balanced and flavorful soup that will definitely keep your belly warm and full.
17. Creamy Asparagus Soup
Asparagus soup is not as common as some of the others on this list. But don’t knock it til you’ve tried it! This soup has such a unique flavor that’s sweet, savory, tangy, and a little bit buttery.
